1 lb of chicken, cut into 1 inche pieces
1/4 tsp salt
1/4 tsp pepper
2 tbsp olive oil
1 medium onion, chopped
1 red bell pepper, cut into thin strips
1 (28oz) can diced tomatoes
1 tsp oregano
2 tbsp capers
3 cups cooked rice

heat oil in large skillet over medium high heat. add onion and bell pepper and cook 5 minutes. add chicken, salt, and pepper and cook 7 minutes. add tomatoes with liquid, oregano, and capers and cook until hot. serve each portion over 3/4 cup rice.
