1/2 cup quinoa
1 cup water
bunch of flat leaf parsley chopped, thick stems removed
4 cucumbers peeled, seeded, and diced
1 ripe avocado, diced
2 - 3 T extra virgin olive oil

Directions:
Directions:
1) In small saucepan, bring water to boil. Add quinoa and simmer, covered, for 15 minutes.
2) Put quinoa in bowl and cool
3) Add remaining ingredients. Mix and season to taste with salt and pepper.
