2 c corn flakes
3 large baking potatoes, peeled and cut lengthwise into 1/4" slices
salt to taste
1 c shredded cheese
1/2 tsp paprika
1/4 c sliced scallions

Directions:
Directions:
Crush corn flakes to equal 1 cup. Pre heat oven to 375º. Lightly coat a large baking pan with non stick cooking spray. Lay the potatoes on the baking pan in a single layer. Lightly coat with non stick cooking spray. Salt the slices then add the cheese and top with corn flake crumbs. Sprinkle with the paprika. Bake without turning for about 25 minutes or until potatoes are cooked through and golden brown. Serve with scallions sprinkled on top.
