One pound cod fillets, cut into serving pieces
2/3 Cup flour
2-1/3 Cup saltine crackers (~ one sleeve), lightly crushed
1 Cup buttermilk
3 extra large eggs, beaten
Ground salt, to taste
Black pepper, to taste
Vegetable oil for frying

Directions:
Directions:
1. Season fish with salt and pepper.
2. Place flour and saltines in one pan.
3. Place buttermilk and eggs in a separate pan.
4. Roll fish in flour mixture for even coating.
5. Place fish in buttermilk/egg mixture.
6. Dredge fish in flour mixture again.
7. Fry fish in oil that covers about half the thickness of the fish.
8. After about five minutes, turn fish over and fry an additional time such that the meat easily flakes with a fork.
