8 slices bacon
4 green onions, thinly sliced
8 eggs
1 cup milk
1/2 tsp. salt
2-1/2 c. shredded Monterey Jack cheese (or cheddar, colby, swiss, etc.)

Directions:
Directions:
Preheat oven to 350 degrees.
Fry bacon until crisp; drain and coursely chop.
Beat eggs with milk and salt. Stir in bacon, onions and 2 c. of cheese. Pour into greased, shallow 2 quart baking dish.

Bake at 350 degrees for 35-40 min, until mixture is set and top is lightly browned.
Spring with remaining cheese. Return to oven until cheese melts. Serve immediately.
