2 tbsp olive oil
1 white onion, peeled and chopped
2 cloves garlic, minced
3 tbsp chili powder
2 tbsp cumin
1 tbsp oregano
1 tsp cayenne
2 bell peppers, chopped
2 carrots, chopped
1 cup white button mushrooms, chopped
1 28 oz can diced stewed tomatoes
1 16 oz can red kidney beans
1 16 oz can cannellini beans
1 lb ground chicken

cook onions and garlic in olive oil in a skillet over medium heat until onions begin to soften. add chili powder, cumin, oregano, and cayenne pepper and stir well. add peppers, carrots, and mushrooms and cook until vegetables begin to soften. cook chicken in separate skillet until done. add diced tomatoes, beans and chicken to the chili. simmer partially covered for 30 minutes.
