3 eggs
2 C. sugar
¾ C. oil
3 C. plain flour
1 t. baking soda
¼ t. baking powder
1 t. cinnamon
3 t. vanilla
½ C. nuts
2 C. grated zucchini

Directions:
Directions:
Beat together first three ingredients until creamy. Sift together flour, baking soda and powder, and cinnamon; add to egg mixture, along with vanilla and zucchini, a little at a time. Add nuts. Pour in two loaf pans and bake at 350°F for 1 hour or until done.
