2 eggs, lightly beaten
1 t. vanilla
1 C. skim milk
½ t. cinnamon
Vegetable cooking spray
6 slices bread
Fruit preserves or mashed fruit

Directions:
Directions:
Beat together egg, vanilla, milk, and cinnamon. Spray a skillet with vegetable cooking spray; heat over medium heat. Add bread slices, one at a time, to egg mixture. Turn bread over and let bread absorb liquid, but do not leave in egg mixture too long or it will fall apart. Gently lift the bread with a spatula into skillet and cook until golden brown on each side. Serve warm topped with 1 T. fruit preserves or ½ C. fresh fruit.

You can freeze the extra French toast and pop slices in the toaster on a busy morning.
Add ¼ C. orange juice to egg mixture and it's even better.
Use raisin bread for a special taste.
