Ingredients: 2 lbs. Ground beef(or 2lb. Lean beef, cut in 1 1/2" chunks) 2 cloves garlic 1 1/2 tsp. Salt 1/4 tsp. Pepper 1 egg 1/4 c. Matzo meal 2- 14 oz. Cans cranberry sauce 1/2 tsp. Cinnamon 2-8 oz. Tins tomato sauce( or 2 - 10 oz. Tins tomato- mushroom sauce)

Directions:Steel Knife: If meat is not already ground, put about 1/3 of the beef chunks into the processor bowl and process until finely chopped, about8 seconds. Do not overprocess. Transfer to a large mixing bowl. Repeat twice more with remaining beef chunks, adding each in turn to the mixing bowl. Drop garlic through feed tube while machine running. Process until minced. Add egg and seasonings. Process. A few seconds. Mix into meat along with matzo meal. Wipe processor bowl clean with paper towels. Place cranberry sauce and cinnamon in processor. Add tomato sauce through feed tube while machine is running. Process 10 to 15 seconds. Immediately remove bowl from base of machine and pour sauce into quart. Saucepan. Heat to simmering. Form meat mixture into tiny meatballs. Drop into simmering sauce. Cover and simmer slowly, about 1 1/2 hours. |
