2/3 c. packed brown sugar
2 T. butter or margarine, softened
3/4 c. low-fat buttermilk
1 tsp. vanilla extract
2 large egg whites
3/4 c. whole wheat flour
1 1/2 c. regular rolled oats
2 tsp. baking powder
1 tsp. ground cinnamon
1/4 tsp. baking soda
1/4 tsp. salt
1 c. shredded carrots
1/2 c. raisins

Directions:
Heat the oven to 350º. Beat the sugar and butter at medium speed with electric mixer until well blended, about 5 minutes. Add the buttermilk, vanilla and egg whites and beat well. Lightly spoon the flour into a dry measuring cup and level with a knife. Combine the flour, oats, baking powder, cinnamon, soda and salt. Gradually add to the sugar mixture, beating just until blended. Stir in the carrots and raisins. Pour the batter into a 7x11 inch baking dish coated with cooking spray. Bake at 350º degrees for 30-35 minutes. Cool on wire rack. Cut into 12 bars.
