1 1/2 c. all-purpose flour
1/2 c. graham cracker crumbs (8 squares, crumbled)
1/4 c. packed brown sugar
1 tsp. baking soda
1/2 tsp. salt
1 egg
1 1/2 c. buttermilk
1/4 c. vegetable oil
3/4 c. semisweet chocolate chips
1 1/4 c. miniature marshmallows, divided
Directions:
Directions:
Preheat oven to 375º. Combine flour, graham cracker crumbs, brown sugar, soda and salt in a large mixing bowl. In a small bowl, combine egg, buttermilk and oil; mix together well. Stir liquid ingredients into dry ingredients, stirring just until moistened. Fold in chocolate chips and 1 cup marshmallows. Fill greased jumbo muffin cups 3/4 full. Sprinkle with remaining marshmallows. Bake 18-20 minutes. Cool 5 minutes before removing.
