1 tablespoon coconut flour
1 tablespoon chopped fresh thyme, dill or sage or 1 teaspoon dried
1 pound chicken cutlets
3 tablespoons extra virgin olive oil
1/2 cup chicken broth
Grated peel of 1 lemon
2 tablespoons chopped fresh parsley
1/8 teaspoon sea salt
1/8 teaspoon ground black pepper

Directions:
Directions:
On a plate or in a shallow bowl, combine the coconut flour and thyme, dill, or sage. Place the chicken slices in the flour mixture to coat.
In a large skillet over medium-high heat, heat the oil until hot. Cook the chicken for 4 minutes, turning once. Remove to a plate.
Add the broth and lemon peel to the pan. Bring to a boil. Add the chicekn, parsley, salt, adn pepper. Cook for 5 minutes, or until the chicken is no longer pink and the juices run clear.
