2 pork tenderloins
1 tsp. black pepper
1 tsp. dried thyme
1 T olive oil
2 oranges,unpeeled,sliced thin
Maple Rum Sauce:
1/2 c chicken stock
2 T cider or red wine vinegar
1/3 c maple syrup
2 T dark rum
1/4 ts dried thyme

Directions:
Directions:
1. Season meat thoroughly with pepper and thyme.
2. Heat olive oil over medium high heat in fry pan. Add meat and brown well on all sides.
3. Line the bottom of a cookie sheet or shallow baking dish with orange slices. Place pork on top and roast uncovered at 375 º for 40 to 60 minutes.
4. Make sauce during last 15 minutes of baking. Drain fat from the fry pan. Add vinegar and bring to a boil scraping up brown bits. Add stock, rum, and thyme and simmer about 10 minutes till reduced to slightly thick, Serve pork on orange slices with the glaze served separate.© Breast of Friends
