Itaian sausage (as much as you like)
1 large onion, chopped
Chopped carrots (as much as you like)
Celery ribs
Leeks, white portion only
Minced garlic
Zucchini-chopped into chunks
Green beans (fresh or frozen, cut into 1/2 inch pieces)
6 C beef broth
2 (14 oz) cans diced tomatoes with Italian seasonings
3 C shredded cabbage
1 tsp. dried basil
1 tsp. dried oregano
1/2 tsp. pepper
Uncooked pasta shells (as much as you like)
3 tbsp fresh parsley
1/3 C parmesan cheese
Any type of bean you like (garbanzo, kidney, chick peas)

Directions:
Directions:
In a large pot, cook sausage and onion until meat is no longer pink. (I take out the meat and cut into bite size pieces and return to pot.)

Stir in carrots, celery, leek, and garlic. Cook for 5 minutes until softened. Add zucchini and green beans and cook 3-5 minutes.

Stir in broth, tomatoes, spices and cabbage. Bring to boil then simmer 1 hour.

Stir in beans and pasta, cook until pasta is done. You can add more broth if you need to.

Serve with parmesan cheese.

If you plan to freeze some, do so before adding the pasta.
Thaw, add more broth and the pasta for another meal another day.
