Ingredients: 2 fresh egg whites 1 pinch of salt
100 g. sugar ( 1/2 C.)
1.8 dl (3/4 C.) heavy cream 4 T. blood orange syrup 1 organic orange- grated orange for decoration

Directions:Beat the egg whites stiff. Add half of the sugar, continue whipping until the beaten egg white is very stiff. Add the remaining sugar. Continue beating for a while until the egg white starts to shine. SHAPING: Fill the meringue mixture into a piping bag with star shaped nozzle ( diameter approx. 16mm.( between 1/2- 3/4 ") . Press eight 7 cm (2 3/4 ") long x 5 cm ( 2") wide meringues onto a baking sheet lined with parchment paper. DRYING TIME: is approx. 3 hours in the center of the preheated oven, at 80º C ( 200º F.) Keep oven door slightly open with a wooden ladle. Remove; carefully loosen the parchment paper; cool meringues on a wire cooling rack. SERVING SUGGESTIONS: Whip heavy cream together with the syrup; fill into a piping bag with a star-shaped nozzle 16 mm ( 1/2-3/4") . Press a large dollop of whipped cream onto the plate , place a meringue shell on either side of the cream, garnish with the orange rind. |
