2 fresh egg whites
1 pinch of salt

100 g. sugar ( 1/2 C.)

1.8 dl (3/4 C.) heavy cream
4 T. blood orange syrup
1 organic orange- grated orange for decoration

Beat the egg whites stiff. Add half of the sugar, continue whipping until the beaten egg white is very stiff. Add the remaining sugar. Continue beating for a while until the egg white starts to shine. SHAPING: Fill the meringue mixture into a piping bag with star shaped nozzle ( diameter approx. 16mm.( between 1/2- 3/4 ") . Press eight 7 cm (2 3/4 ") long x 5 cm ( 2") wide meringues onto a baking sheet lined with parchment paper. DRYING TIME: is approx. 3 hours in the center of the preheated oven, at 80º C ( 200º F.) Keep oven door slightly open with a wooden ladle. Remove; carefully loosen the parchment paper; cool meringues on a wire cooling rack. SERVING SUGGESTIONS: Whip heavy cream together with the syrup; fill into a piping bag with a star-shaped nozzle 16 mm ( 1/2-3/4") . Press a large dollop of whipped cream onto the plate , place a meringue shell on either side of the cream, garnish with the orange rind.
