150 g. leeks,(1 1/2 C.) cut into thin strips
1 onion, finely chopped
1 kohlrabi, diced
1 carrot, diced

500 ml ( 2 C.) vegetable stock
50 g. pasta (1/2 C.)
2 T. milk
1 tin (can) butter beans (430 g) rinsed and drained
200 ml (3/4 C.) cream
100 g. ( 4 oz.or 2/3 C.) baby leaf spinach
50 g (2 oz.or 1/3 C.) grated Gruyere cheese
1 pinch nutmeg
a little pepper

Directions:
Melt butter in a pan. Add Leeks and onion, saute till cooked. Add kohlrabi and carrot. Continue cooking. Add vegetable broth, bring to a boil, reduce heat. Cover and simmer for approximately 10 minutes. Add pasta and milk, bring to a boil, reduce heat simmer for another 10 minutes or so. add butter beans, cream, spinach. Add to the cheese to the pan and warm through over low heat. Add seasoning to your liking.
