Ingredients:  
Ingredients:  
1 c. Quinoa
2c. Water
Pinch of salt

For dressing:
1 large lime or lemon
3 T. Honey
2 T. Finely chopped mint

Fruit:
1 1/2 c. Blueberries
1 1/2 c. Sliced strawberries
1 1/2 c. Sliced mangos
You can also use any combination of above fruit along with peaches, nectarines, pineapples, blackberries, kiwi and raspberries...whatever you like!!!

Directions:
Directions:
Cook quinoa according to package directions and cool.
For dressing---whisk lemon or lime, honey and mint together.

Add cooled quinoa and fruit to serving bowl. Toss carefully with dressing. Keep refrigerated
