1 1/2 lb. spicy Italian chicken or pork sausage ( out of casing)
1/2 c. Purple onion, chopped
1/2 c. Yellow onion, chopped
2 T. Olive oil
5 cloves garlic, minced
2 28 oz. cans crushed tomatoes
6 c, chicken broth ( Emerils, Rachel Ray, Swanson or homemade)
4-6 c. Kale, roughly chopped
1 c. 1/2 and 1/2 or whole milk
1 pkg. fresh or frozen tortellini
1 c. freshly grated Parmesan cheese
Salt and pepper to taste

In a large cast iron cooking pot or sauce pan, heat 1 T. Oil and brown sausage, breaking into crumble like chunks or pieces ( your preference). Once cooked, drain and set aside. In same pot, heat 1 T. Oil, sauté onion and garlic till tender. Once these are carmelized, add tomatoes, broth, sausage and kale. Bring to boil, stirring frequently and add salt and pepper to taste. Continue to boil 5-10 more minutes to allow flavors to meld. Add tortellini and cook till al dente according to pkg---5-8 minutes (usually).
Add 1/2 and 1/2 or milk and as much or as little Parmesan cheese as you like--the more, the better!!!
Simmer for 3-4 more minutes.
Great to eat with warm, crispy Italian bread!!

Freezes very well, but you probably won't have any leftovers!!
