1 TBSP ground cumin seed
1 TBSP paprika
1/1/2 tsp cayenne pepper
1 TBSP turmeric
1-11/2 tsp black pepper
1 tsp salt
3 cloves garlic peeled and mashed to pulp
6 TBSP lemon juice
2 lb chicken pieces - use a combination of thighs, drumsticks and breasts

Combine the cumin, paprika, cayenne, turmeric, black pepper, salt, garlic and lemon juice in a bowl. Mix well. Rub this mixture over the chicken pieces, pushing the paste inside and flaps and openings that you can find.

Spread the chicken pieces in a shallow baking tray and set aside in fridge for 3 hours. Longer won't hurt. Just cover the chicken with cling film to prevent it from drying out.

Preheat the oven to 400F. Put the chicken in the oven and bake for 20 minutes.
Turn the chicken pieces over and bake for another 20 minutes or until chicken is tender. Don't overcook. Baste the chicken 3-4 times during cooking. If a lot of liquid accumulates in baking tray remove extra fat with spoon.
