2 Tbsp Olive or Avocado Oil
2 Tbsp Onion, chopped
1 1/2 C Rice, white or brown
2 Cups Chicken Broth, preferably low sodium
1 Cup Salsa

Directions:
Directions:
Heat oil and brown onion, approx. 5 minutes.
Add rice and continue browning rice for 4 to 5 more minutes.
Add broth and salsa and bring to a boil.
Reduce heat, cover and simmer for 20 minutes or until the liquid is absorbed.
Enjoy!
