3 tablespoons olive oil
1 sweet onion, chopped
4 cloves of garlic, minced
1 head of cauliflower, cut into bite sized florets
2/3 cup white wine
1 teaspoon salt
8 ounces uncooked whole wheat spaghetti
1 pint grape tomatoes, halved
1/2 cup coarsely chopped walnuts
1/4 teaspoon red pepper flakes
1/2 cup herb goat cheese
1/4 cup feta cheese

Directions:
Directions:
1. Heat oil in a skillet over medium heat. Add onion; cook and stir until soft. Add garlic; cook for 2 minutes. Add cauliflower; cook and stir for 5 minutes. Add wine, salt and pepper. Cover and cook for 15 minutes or until cauliflower is crisp and tender.
2. Meanwhile, cook pasta. Drain and keep warm; reserve 1/2 cup pasta cooking water.
3. Add tomatoes, walnuts and reserved pasta water to skillet; season with pepper flakes. Cook for 2 to 3 minutes or until tomatoes soften.
4. Toss spaghetti with vegetables and stir in cheese.
