2 1/2 c. Flour
1/2 c. Cocoa Powder
1 tsp. Baking Soda
1/2 tsp. Salt
1 c. Butter (softened)
2 c. Sugar
4 Eggs
1 c. Sour Cream
1/2 c. Milk
1-1 oz bottle Red Food Coloring
2 tsp. Vanilla

Icing
1- 8z package Cream Cheese
1/4 c. Butter (softened)
2 tbsp. Sour Cream
2 tsp. Sour Cream
2 tsp. Vanilla
1-16 oz package Icing Sugar

Directions:
1. Preheat oven to 350º . Mix flour, cocoa powder, baking soda and salt in a medium bowl. Set aside.
2. Beat butter and sugar in a large bowl with electric mixer on medium speed for 5 minutes until light and fluffy. Beat in eggs, one at a time. Mix in sour cream, milk, food coloring and vanilla. Gradually beat in flour mixture on low speed until just blended. Do not over beat. Spoon batter into 30 paper lined muffin cups, filling each 2/3 full.
3. Bake for 20 minutes or until toothpick inserted into cupcake comes out clean. Remove from pans and cool completely on wire rack.

Icing:
1. Beat cream cheese, softened butter, our cream and vanilla in a large bowl until light and fluffy. Gradually beat in icing sugar until smooth.
2. Frost with Vanilla Cream Cheese Icing.
