1 Tsp. Butter
1 Tsp. Olive Oil
1 Pound Hot Pork Sausage
2 Cups Chopped Onion
1 Tbsp. Garlic, Minced
1 Bag (16 Ounces) Frozen Black-Eyed Peas
2-14 Ounce Cans Vegetable Stock (Broth)
1-8 Ounce Can Tomato Sauce
1 Tbsp. Dried Oregano
1/2 Tsp. Black Pepper
1/2 Tsp. Salt

Directions:
Directions:
In a large pot, melt butter and olive oil. Add sausage, onion and garlic. Cook until sausage is crumbled and brown. Add black-eyed peas, stock, tomato sauce, oregano, salt and pepper. Boil on medium heat for 15 to 20 minutes. Simmer on low for another 30 minutes before serving.
