10 or 12 Ears Fresh Corn (Remove Husks and Silks)
2 Sticks Butter
1/4 Cup Milk
1 Tsp. Sugar
1/2 Tsp. Salt
1/2 Tsp. Black or White Pepper

Directions:
Directions:
Cut corn from cob with sharp knife and scrape cob to get the corn juices. Melt butter in skillet. Add corn, milk and pepper. Cook on medium heat for 20-30 minutes, until corn is tender. Add sugar and cook for an additional 5 minutes, stirring frequently to keep corn from sticking.

In my family, we always referred to fried corn as "roasting ears". Apparently, corn was picked while it was tender and was roasted over a fire. Thus, the name "roasting ears". Later, it was cut off the cob and fried. Corn is no longer tender once it stays on the stalk and fully matures. Both my grandmother and my mom fried their corn in a cast iron skillet.
