1-1/2 Tsp. Salt
1-1/2 Tsp. Black Pepper
1-1/2 Tsp. Sweet Paprika
1 Tsp. Dry Mustard
1 Tsp. Ground Cumin
1/2 Tsp. Dried Thyme Leaves
1/2 Tsp. Dried Oregano
2 Tbsp. Vegetable Oil
1/2 Pound Chicken Gizzards, Chopped
1/4 Pound Ground Pork
2 Bay Leaves
1/2 Cup Onions, Finely Chopped
1/2 Cup Celery, Finely Chopped
1/2 Cup Bell Pepper, Finely Chopped
2 Tsp. Garlic, Minced
2 Tbsp. Unsalted Butter
2 Cups Chicken Broth
1/2 Pound Chicken Livers, Chopped
3/4 Cup Uncooked Converted Rice

Directions:
Directions:
Combine the first 7 ingredients (seasoning mix) in a small bowl and set aside. In a large skillet, over high hear, cook the gizzards, pork and bay leaves in the vegetable oil. Cook until thoroughly browned, about six minutes. Stir in seasoning mix. Add onions, celery, bell peppers and garlic. Stir thoroughly. Add butter and stir until melted. Reduce heat to medium and cook for 8-10 minutes. Add the stock. Cook for 5 minutes. Stir in chicken livers and cook for 2 minutes. Add rice and stir thoroughly. Cover pan and turn heat to a very low setting, cooking for about 5 minutes. Remove from heat and leave covered until rice is tender, about 10 minutes.
