2 Tbsp. Butter
1 Large Onion, Chopped
1 Green Pepper, Chopped
8 Green Onions, Chopped
2 Celery Ribs, Chopped
3 Cups Cubed Cooked Ham
1 Pound Smoked Sausage
1-8 Ounce Can Tomato Sauce
1/2 Tsp. Salt
1/2 Tsp. Black Pepper
1/4 Tsp. Cayenne Pepper
3-4 Cloves Garlic, Chopped
1 Pound Large Raw Shrimp (Peeled and Deveined)
5 Cups Steamed Rice

Directions:

Melt butter in a large skillet over medium heat. Add onion, bell pepper, green onion, garlic and celery. Sautee until tender. Add ham, sausage, tomato sauce, salt, black pepper and cayenne pepper. Cook, stirring occasionally, 20 minutes on low heat until sausage is cooked. Add one pound of peeled, deveined shrimp and rice. Cover and cook for 15 minutes. Chicken can be substituted for ham or you can add 1-1/2 Cups skinned and deboned chicken thighs. If you add chicken, cook chicken in 2 tablespoons oil and set aside before you sautee your onions and bell pepper mixture. Add chicken to the ham and sausage mixture at the same time add the shrimp and rice.
