1 pound scallops
¾ cup dry white wine
¼ cup water
1 Tbsp butter
1 Tbsp parsley fresh, chopped
1 small onion, sliced
1 small bay leaf -- broken
2 tsp lemon juice
¼ tsp salt

¼ cup flour
1 cup light cream
2 Tbsp grated Parmesan cheese
¼ cup sliced fresh mushrooms

Directions:

Rinse & drain scallops; cut if large.
Combine next 8 ingredients in saucepan over medium heat
Add scallops, simmer while covered for 2-3 minutes. Strain, reserving liquid, & keep scallops warm.
In separate saucepan melt butter, add flour & cook until bubbly. Salt & pepper to taste.
Add cream & 1 cup of scallop liquid; stir constantly until thickened & bubbling.
Add scallops (& extra liquid if required) & reheat until hot.
