2 cups of sugar
9 egg yolks
1 teaspoon vanilla
2 cups sifted flour
1 tablespoon baking powder
1/2 cup milk
9 egg whites

SYRUP:
2 pounds of sugar
3 sticks of cinnamon
2 liters of water (8 1/2 cups)

CUSTARD:
6 ounces of cornstarch
2 liters of milk (8 1/2 cups)
1 1/4 pound of sugar (2 1/2 cups)
1/4 teaspoon salt
3 sticks of cinnamon
2 eggs
1/2 cup of rum

For the CAKE:
Preheat the oven to 350 degrees.
In a large bowl, beat the sugar with the yolks at high speed until it lightens in color. Add the vanilla. Combine the flour and baking powder. Alternate adding the flour and milk until well combined. Beat the egg whites until stiff peaks form. fold in the egg whites to the flour mixture until the egg whites are incorporated. Pour into a greased glass cake pan. Bake 30 to 40 minutes.

For the SYRUP:
At medium heat, bring water to a boil with the cinnamon until it is dark in color. Add the sugar and let it simmer on low heat until the sugar is dissolved.

For the CUSTARD:
Make a slurry with some milk and the cornstarch. Beat the eggs and add them to the slurry. In a large pot simmer the milk and cinnamon at medium heat. Add the egg mixture to the milk, whisking constantly. Add the sugar, salt and rum. Let the mixture simmer for 15 minutes.

Pour the syrup over the cake to taste. Once it is absorbed, pour the custard over the cake.
Refrigerate the cake. Decorate with dried plums and cinnamon on top.
