1 1/2 cups flour
1 tsp baking soda
1 tsp salt
1/2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp freshly grated nutmeg (optional)
1 cup sugar
1/2 cup vegetable oil
2 large eggs, beaten
2 tsps vanilla
2 ripe bananas, peeled and coarsely mashed
1 cup (about 4 oz) fresh blueberries

Preheat oven to 350º F. Butter and flour a 9x5x3" loaf pan.
In a medium bowl, whisk together the flour, baking soda, salt, baking powder, cinnamon and nutmeg. In a large bowl, beat the sugar, oil, eggs and vanilla until blended. Stir in the bananas and blueberries. Add the dry ingredients and stir just until blended.
Pour the batter into the prepared loaf pan. Bake until a toothpick inserted in the center of the loaf comes out clean, about 45-50 mins. Cool for 15 mins. Remove the loaf from the pan and cool completely on a wire rack, about 2 hrs.

The first time I saw this recipe being featured on "Giada at Home", I quickly printed off the recipe and made my first of soon to be, many of these loaves. I adjust the baking time when I make the blueberry-banana bread recipe into mini loaves or muffins, and then give as gifts in pretty packaging!
