1 3/4 cup flour
2 tsps baking soda
1/4 tsp salt
1/2 cup unsalted butter, at room temp
3/4 cup packed light brown sugar
4 Tbsps white sugar
1 large egg
2 tsps lime zest
1 Tbsp fresh lime juice
1 cup shredded coconut, toasted

Directions:

Heat oven to 350º F. Line 2 baking sheets with parchment paper.
In a medium bowl, whisk together the dry ingredients. Using an electric mixer, in a large bowl beat the butter, brown sugar, 2 Tbsps white sugar until light and fluffy about 3 mins. Beat in the egg, lime zest and juice. Add 1/2 cup coconut and reduce speed to low and gradually add the flour mixture, mixing just until incorporated.
In a small bowl, combine the remaining 1/2 cup coconut and 2 Tbsps white sugar. Drop rounded Tbsp of dough into the coconut sugar mixture and roll around to coat and form a ball. Place 2" apart on the baking sheet. Bake until set and the edges are light golden brown, around 10-12 mins. Let cool for 5 mins and transfer to wire racks to cool completely.

Put the lime in the coconut!!! A refreshing cookie, especially in the spring and summer months to bake. The toasted coconut is the secret to this chewy sugar cookie.
