4 T. unsalted butter, room temperature, more for buttering pan
1/3 c. granulated sugar, plus more for dusting
3 large eggs, at room temperature
1/3 c. all-purpose flour
1/4 tsp. salt
8 oz. bittersweet chocolate, melted
Confectioners' sugar for dusting

Preheat oven to 400º F. Generously butter 6 standard muffin cups. Dust with granulated sugar and tap out excess. Set aside.
In the bowl of electric mixer with paddle attachment, cream butter and sugar together until fluffy. Add eggs one at a time beating after each. With the mixer on low speed stir in flour and salt until just combined. Divide batter evenly among prepared muffin cups.
Place muffin pan on baking sheet; bake just until tops of the cakes no longer jiggle when the pan is lightly shaken, 8-10 minutes. Remove from oven; let stand 10 minutes.
To serve, turn out cakes, and place on serving plates, bottom side up. Dust with confectioners' sugar, and serve with whipped cream, if desired. Serves 6.
