 6 tablespoons honey  
5 tablespoons lime juice  
1 tablespoon chili powder  
˝ teaspoon garlic powder  
2 to 3 cups cooked, shredded chicken
 2 cups green enchilada sauce, divided  8 to 10 flour tortillas  
4 cups shredded Monterey Jack cheese, divided  
1 cup heavy whipping cream

Directions:
Directions:
Whisk the first four ingredients and toss with shredded chicken in a resealable plastic bag. Let chicken marinate in the fridge for at least 30 minutes, but preferably half a day or so. Preheat oven to 350 degrees F. Pour about ˝ cup green enchilada sauce on the bottom of a 9x13-inch baking pan. Remove chicken from bag, reserving any leftover marinade, and set aside. Fill the tortillas with chicken and shredded cheese, saving about 1 cup cheese to sprinkle on top of enchiladas. Place rolled tortillas in 9x13-inch pan as you go. Mix the remaining enchilada sauce with the cream and leftover marinade. Pour sauce on top of the enchiladas. Sprinkle with remaining cheese. Bake 30 minutes, until brown and crispy on top. Makes 8 to 10 servings.
