6 bls young Beets
1 gallon Water
3 diced, unpeeled Oranges
3 diced, unpeeled Lemons
4 obs White Sugar
1 tsp Wine Yeast

Directions:
Directions:
Wash, peel and cut up beets. Boil until tender in gallon of water, Strain and add to liquid: oranges, lemons and sugar and stir well.
When cool, add yeast.
Put in crock, cover and let stand until it stops working (fermenting).
Keep at room temperature and stir often while working.
Strain and place in jugs with air trap.
Rack (1st) after 1 month.
Rack (2nd) after 3 months - Top with Water
Rack (3rd) after 2 months and Bottle

Wait one year before tasting.
