2 lbs. boneless, skinless chicken breast
1 cup salsa, homemade or store bought
1 cup low sodium petite diced canned tomatoes
2 T. taco seasoning
1 cup onions, diced fine
1/2 cup celery, diced fine
1/2 cup. carrots, shredded - optional
3 T. reduced fat sour cream

Directions:
Directions:
Place the chicken in a slow cooker; sprinkle taco seasoning over the meat; then layer the vegetables and the salsa on top. Pour 1/2 cup water over the mixture, set on low and cook for 6-8 hours. The meat is cooked when it shreds or reaches an internal temp of 165º. When ready to serve, break up chicken with two forks then stir in the sour cream.

Ingredients for a halved recipe: 16 oz. boneless, skinless chicken breast, 1/2 c. salsa, 1/2 c. petite diced tomatoes, 1 T. taco seasoning, 1/2 c. fine diced onions, 1/2 c. fine diced celery, 1/4 c. shredded carrots (optional), 1 1/2 T reduced fat sour cream. Prepare as directed.
