2 cups sugar
4 eggs
2 cups grated zucchini (peeled)
1 cup veg. oil
1 tsp. cinnamon
2 cups flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 tsp. vanilla
1 cup sliced maraschino cherries (reserve juice for frosting)

Directions:

Preheat oven to 350º. Lightly spay jelly roll pan (10.5"x 15").
In large bowl beat sugar and eggs until well blended; add oil, vanilla and all the dry ingredients and blend thoroughly. Mix in the zucchini and cherries. Spread batter in the pan and bake for 30 minutes or until toothpick comes out clean.
Cool completely before frosting

FROSTING:
3 oz. cream cheese
3/4 stick margarine or butter
1 tsp. milk
2 cups powdered sugar
1 T. + more if needed - cherry juice for flavoring. (Do not add to much or frosting will become thin)

You can make the frosting and keep in refrigerator until the bars are cooled or overnight. A jelly roll pan makes about 24 bars. These freeze wonderfully!
