1 1/2 cups corn oil
2 cups sugar
3 eggs
3 cups all purpose flour
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp baking soda
1 tsp vanilla
3 cups apples, peeled, cored and thickly sliced (see notes)
1 cup walnuts

Preheat oven to 350
In large mixing bowl, stir oil and sugar together. Add eggs and beat until the mixture is cream. Add the flour, cinnamon, baking soda and vanilla. Stir until completely combined. Add apples and walnuts to the batter and stir well.

Grease bundt pan with corn oil. Bake for 1 hour 15 in or until toothpick comes out clean. Sift confectioner's sugar on top if desired.

Brent made this for a project in grade school along with his classmates. We got a note from the teacher saying his cake was the best in the class and what did we do different. Well Brent and PaPa Dent made it so I asked.....PaPa Dent added more apples and Brent thought adding a small amount of nutmeg made it better. Again....the taste buds.
