3 eggs separated
1 2/3 cups buttermilk
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
2 Tablespoons melted butter
2 Tablespoons sugar

Directions:
Directions:
1. In separate bowl beat egg whites until stiff.

2. In another bowl add buttermilk, egg yolks, flour and sugar
baking soda, baking powder, melted butter, mix all together until well blended
add the melted butter, mix .

3. add the egg whites and fold into the batter slowly you do not want to break up the egg whites (this is what makes them fluffy)
Pour unto a hot griddle and enjoy
Tip: if no buttermilk you can use milk but add a table spoon of vinegar to the milk and let sit for about a minute then add.

Add: fruit as well I do not mix the fruit into the mix I put them on top of the pancake as they are cooking (before flipping over)
