3 cups coconut flakes
1 1/4 cups chopped mixed nuts ( I use cashews, pecans, sliced almonds and pumpkin seeds)
1/4 cup pure maple syrup
1/4 cup coconut oil
2 tsp. vanilla
Sprinkle with cinnamon
1/2 to 3/4 cup craisins

Mix coconut flakes & nuts in large bowl & sprinkle with cinnamon. Put the coconut oil & maple syrup together in microwave safe dish and cook on medium for 45 seconds, stir and return for another 30 seconds or until bubbly. Stir in vanilla and pour over the nut/coconut mixture. Stir well until well coated.

Preheat oven to 350º. Spread parchment paper on a large cookie sheet. Spread the mixture over the parchment paper evenly and bake for about 12 to 15 minutes until starting to brown. Remove and gently stir in craisins. Store at room temperature in air tight container.
