Ingredients:
Ingredients:
2 lbs. lean ground beef (cooked & drained)
2 lbs. Velvetta cheese
1 Pkg. Taco Seasoning
1 can Ro-tel tomatoes
2 large bags of tortilla chips

Directions:
Directions:
Cook hamburger and drain off grease. (I always use a double boiler to cook my hamburger. This will keep the flavor and spices in the meat but no grease.)
Add taco seasoning and Ro-tel, mix together well.
Cut up velveeta cheese and melt and mix together with meat mixture.
I make this in the crockpot so it stays nice and warm and the right consistency for serving.
If it starts to thicken you can add a little milk to bring it back to a nice dipping consistency.
