3 large eggs
3/4 cup buttermilk
3/4 cup vegetable oil
1 1/2 cups white sugar
2 tsp. vanilla
2 tsp. ground cinnamon
1/4 tsp. salt
2 cups flour
2 tsp. baking soda
2 cups shredded carrots
1 cup flaked coconut
1 cup chopped walnuts or pecans
1 (8 oz.) can crushed pineapple with juice
1 cup craisins

Directions:

Preheat oven to 350º. Grease and flour a 9 x 13 pan.
In a medium bowl, sift flour, baking soda, salt and cinnamon. Set aside.
In a large bowl, combine eggs, buttermilk, oil, sugar and vanilla. Mix well. Add flour mixture and mix well.
In a medium bowl, combine shredded carrots, coconut, nuts, pineapple and craisins.
Using a large wooden spoon, add carrot mixture to batter and fold in well.
Pour into prepared pan.
Bake 350º for one hour. Make sure toothpick comes out clean. Cool and serve.
