1 ¼ cups fresh or frozen blueberries
½ cup sugar
Mix together and set aside

In separate bowl
2 cups flour
½ cup sugar
¾ teaspoon baking soda
¼ cup canola oil
1 beaten egg
¾ cup buttermilk

Mix together the flour, sugar, baking soda adding the sugar and oil. Have mixer on low and then add the egg and buttermilk slowly,
Mix well and pour into cupcake papers in a cupcake pan
Bake @ 350 for 25 minutes or until cake tester come out clean and muffins are lightly brown on top

Tip: can use milk with a tablespoon of vinegar if you do not have buttermilk
