1 package (30 ounces) shredded hash brown potatoes
2 cups 8 ounces Shredded cheddar cheese
Salt and pepper to taste
½ cup green pepper
1 ½ cups sour cream
1 can cream chicken soup
1 ½ cups crushed cornflakes
1 tablespoon butter melted

In large bowl. Combine first 4 ingredients, in another bowl combine sour cream and cream of chicken soup. Pour over the potato mixture and mix gently to combine.
Transfer to a 3 quart baking dish coated with non stick cooking spray.
Toss cornflakes and butter sprinkle over the top and Bake uncovered at 350 for 45- 55
Minutes or until heated through

Tip: you can exchange the green pepper for onions or you can use both if you like.
