2 Marconi peppers, cleaned, top cut off and slit open one side
1 lb. ground beef
1 onion, diced
3 cloves garlic, minced
1 cup salsa
1/2 cup beef broth
1 T. tomato paste
1/3 cup black olives
1 - 2 tsp. chili powder
1/2 tsp. cumin
Salt to taste
Cilantro (optional)
Grated cheese

Directions:
Directions:
In medium pan sauté onions and garlic in 1 T. of oil or butter, add the salsa, beef broth and tomato paste and simmer for 5 minutes or until thicken.
Brown the ground beef and drain. Mix the meat and the sauce mixture. Add the olives, cilantro, chili powder, cumin and salt. Blend well.
Pour the liquid from this mixture into the bottom of baking pan/dish. Fill the peppers with the meat mixture and place in baking dish. Top with grated cheese if desired.
Cover pan and bake for 35 minutes at 375º, uncover and bake an additional 15 minutes.
