2 cups all-purpose flour
3/4 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. kosher salt
1/8 tsp. ginger
1/8 tsp. nutmeg
1/2 cup butter (1 stick), softened
1/2 cups light brown sugar
1/2 cup white sugar
2 large eggs
4 - 5 medium sized ripe bananas mashed with 1 tsp. vanilla

Preheat oven to 325º and grease a loaf pan.
In a medium bowl combine flour, baking soda, baking powder, salt, ginger and nutmeg. In a large bowl cream together butter and the sugars at high speed until fluffy, add eggs one at a time incorporating fully with each addition. Turn mixer to low, alternately add the flour and banana mixtures starting and ending with the flour. Pour the batter into the greased loaf pans.
Bake for 40 - 50 minutes or until golden and toothpick comes out clean.
