7 cups cored,chopped green tomatoes; about 12
5-8 jalapeno, Habanero or Scotch Bonnet peppers, seeded and finely chopped
2 cups chopped red onion
2 cloves garlic, finely chopped
½ cup lime juice

½ cup loosely packed finely chopped cilantro
2 tsp. ground cumin
1 tsp. dried oregano
1 tsp. salt
1 tsp. fresh ground pepper
6 - 8oz. preserving jars

Directions:

Sterilize your jars, lids and bands in boiling water. Turn down heat to simmer and leave until ready to use.

Combine tomatoes, peppers, onion, garlic and lime juice in a large saucepan. Bring to a boil. Stir in cilantro, cumin, oregano, salt and pepper. Reduce heat and simmer 5 minutes. Ladle hot salsa into hot jars leaving ½ inch headspace. Remove air bubbles and wipe the rim. Place and loosely tighten bands. Leave for 24 hours and re-tighten if necessary.
