For the cake:
1/2 c. margarine or butter
1 1/2 c. sugar
2 eggs
1 c. sour cream
1 tsp. vanilla
2 c. flour
1 tsp. baking soda
2 c. chopped rhubarb

For the topping:
1/2 c. brown sugar
1 Tb. flour
1 tsp. cinnamon
1 Tb. margarine
Directions:
Directions:
Cream butter or margarine and sugar. Beat in eggs, one at a time. Stire in sour cream and vanilla. In a separate bowl, mix together flour and baking soda. Add to creamed mixture. Fold in rhubarb.

Topping:
Mix together all topping ingredients and sprinkle over top of cake before baking.
My family likes more of the topping, so I double it.

Bake at 350º for 30-40 min.

This recipe I got from my neighbor, who also provided me with all the rhubarb we could eat and freeze each summer. This cake is a favorite... so much so, that after the first time I made it, Randy and Nathan requested that they each get their own next time!
