4 med. sweet potatoes
2 lg. egg whites
2 T. brown sugar or honey
1 T. butter
1/4 tsp. salt
1/8 tsp. nutmeg
1/2 c. marshmallows or more to cover
Directions:
Directions:
Peel and slice potatoes; boil until tender. Beat with mixer until almost smooth. Add egg whites, sugar, butter, salt and nutmeg. Beat until light and fluffy. Pour into a 9x13 baking dish and bake at 350º for 15 minutes. Add marshmallows and bake another 10 minutes or until lightly browned.
