1 c. sifted cake flour
3/4 c. sifted sugar
1 1/2 c. egg whites (12)
1 1/2 tsp. cream of tartar
1/4 tsp. salt
1 1/2 tsp. vanilla
3/4 c. sifted sugar

Directions:
Directions:
Sift flour an 3/4 cup sugar together 4 times over wax paper. Beat egg whites with cream of tartar until frothy, add salt and vanilla and beat until soft peaks form. Add the remaining sugar 2 T. at a time and beat until stiff peaks form. Sift in flour mixture 2 T. at a time and fold in gently with a spatula until flour is incorporated. Spoon in ungreased tube pan and cut with a knife to remove air pockets. Bake at 375º for 35 minutes. Invert on a glass long neck bottle until completely cool and gently cut out of pan.
