Mike's Jambalaya Recipe

approx 1/4 cup cooking oil
1 large yellow onion (diced)
1 small can green chicken
2 cans Rotelle hot diced tomatoes
3 packages andouille sausage, sliced into 1/4 inch pieces
4 small or 2 large packages chicken tenders
4 lbs large shrimp, peeled and deveined
2 large boxes Zatarans jambalaya rice
approx 4 cups of water

In a large pot outdoors, add the cooking oil, diced onion and green chilies. Simmer onions until done and add andouille sausage and very lightly brown. Stir occasionally. Once sausage is done, add the Rotelle tomatoes and reduce heat. Simmer for 5 minutes. Add raw chicken tenders to pot, cover and simmer. Stir occasionally. When chicken is done take two large forks and shred chicken. You may need to add some water at this time. Let mixture cook for 10-15 minutes covered, making sure the chicken is completely done. From this point on, you will need to stir the mixture fairly frequently. Add the Zatarans rice with about 1/2 the amount of water the recipe on the box calls for. Let simmer while stirring and add more water as needed. Taste the rice to make sure it is done. Once rice is done, add the shrimp and stir to the bottom. Keep turning the rice over frequently until shrimp is done.

If you make this over an open flame as Mike does, keep an eye on the flame making sure the pot doesn't get too hot or the rice will burn and you will have a big mess to clean.
