1-1/2 c Arborio Rice
5-1/2 c simmering chicken stock, preferably homemade, divided
1 c freshly grated fontina
2 tbsp unsalted butter, divided
2 tsp kosher salt
1 tsp freshly ground black pepper
1 c chopped fresh spinach

Directions:
Directions:
Preheat the oven to 350º.

Place the rice and 4 cups of chicken stock in a dutch oven. Cover and bake for 45 minutes, until most of the liquid is absorbed and the rice is al dente. Remove from the oven and add the remaining chicken stock, fontina, butter, salt and pepper. Stir vigorously for 2 to 3 minutes, until rice is thick and creamy. Add the spinach and stir until heated through. Serve hot.

We had a cooking class with the youth at Peace and made a full meal, this dish was delicious. We also made Chicken Saltimbocca, Balsamic "disc" Salad and Individual Strawberry Trifles which are all included in this cookbook.
